26.10.2020- Adventures in Baking: Madeleines

Hello! Or should that be Bonjour! The subject of today's baking post is a classic French favourite which, until recently, I had never ever baked. Can you believe that? Given that I'm such a huge fan of the Madeleines  which come pre-wrapped from the supermarket, this fact baffles me too, but, as with most things this year, it took the time and headspace of living under lockdown to allow me the opportunity to finally get round to baking some from scratch. I followed this wonderful recipe from BBC Food, adding a couple of my own twists along the way: 


2 free range eggs
100g caster sugar
100g plain flour, plus a little extra for dusting  
Juice and zest of 1 lemon
3/4 tsp baking powder
100g melted butter, cooled slightly, plus a little extra for greasing

1) Preheat the oven to 200 degrees. 
2) Using a pastry brush, brush the tray with a little melted butter, then add a sprinkling of flour to coat each seashell.
3) Whisk the eggs and sugar together until frothy. Then gently whisk in the rest of the ingredients.
4) Leave to stand for 20 minutes before pouring into the tray (I used a spoon to ladle mine in!)
5) Bake for 8-10 minutes, or until the mixture has risen and cooked through. 
6) Once cooked, transfer to a wire rack and leave to cool. 
7) Enjoy!

Honestly, I can't quite get over how simple this recipe is- definitely one which I'll be revisiting on a regular basis from now on!
